About the Event
Vedatya hosted “Chaupal” on 16th December 2017. The event was an extension of the symposium on “sustainable culinary practice” being organised by “Tasting India Symposium” an annual event conceptualised by Sourish Bhattacharya and Sanjoo Malhotra.
The session started off with the welcome note by Mr. Amit Kapur and Mr. Sandeep Munjal, followed by the discussion on 'Traditional Products and Innovative Cuisine' been moderated by restaurateur and blogger Mohit Balachandran. Some of the topics that were discussed include: · Cooking with Forgotten Produce: Get Ready to Unlearn - Chef Vipul Gupta. · Cuisine without Frontiers – Chef Nishant Choubey and Chef Abhishek Gupta · Sustainable Kitchen Planning - Mohit Balachandran · How Cuisines are Reborn: The Lavaash Experience – Chef Megha Kohli · The Future of Haute Cuisine - Chef Priyam Chatterjee · New Bar Concepts Rooted in Indian Tradition- Prateek Arora The main attraction of the event was the discussions on ‘Safe and Sustainable Food’, where farmers from different parts of the country shared their experiences and challenges with respect to organic farming, reviving indigenous crops and improving rural livelihoods. Some of the prominent speakers include: · Sneh Yadav - Tijara Farms. · Achintya Anand- KrishiCress. · Vijaya Pastala - Under the Mango Tree. · Aparna Rajagopal- Beejom. · Satpal Chahar - Basmati Fairtrade. · Sanjay Sharma – Vedatya. · Kapil Yadav – Entrepreneur.
Vedatya also showcased the in-house wines been produced by the hospitality students and a wide range of freshly picked vegetables and herbs grown at Vedatya. The hospitality students also served traditional Haryanvi food using fresh organic produce from Vedatya's farm. It was indeed a great learning experience for all the students and participants had a great time attending the sessions and interacting with the celebrities from the culinary world.
